Remember when I cooked an entire frozen chicken in the crockpot, without even thawing it first? Well, I decided to do that again, because we had a second whole bird in the freezer. And it was rock solid.
I'm nearly feeling better, but I've basically been sick at this point for two solid weeks. That's bad enough, but David's now sick, too. I was thinking that homemade chicken soup would be a good thing for us. So, I dropped the frozen chicken in a crockpot, and when it was falling apart, I took the meat out, strained out the gross bits and pieces, and added it to some carrots, celery, onions and garlic that I'd been sautéing. A few sprigs of thyme and a bay leaf and some crushed black pepper, and it turned into soup. A really flavorful soup, actually. We shredded some of the chicken meat to add it into the mix, and it turned out really, really good.
